They put a surprising and original spin on the local food heritage by reinventing the most traditional recipes with fresh seasonal produce. Meet Michelin-starred chef Éric Guérin at the helm of the Relais du Silence La Mare aux Oiseaux in Saint- Joachim near Saint Nazaire. A native of Normandy and forever enamoured with Brière, his cuisine is an invitation to his very unique world. A keen traveller, he daringly combines world products in his dishes while keeping the spirit of traditional Bière cuisine alive. "I also have a Produce menu where we offer Brière milk-fed veal, beef produced in Brière and honey from here. The fish arrives straight from le Croisic or la Turballe. And with the garden, I’ve got no trouble finding herbs." His creations feature delicious seasonal produce carefully selected from regional farmers and cooked with sophistication and subtlety. Franck Quinton is the proof. In his Norman Manoir du Lys nestled in the Andaine forest, he cooks the undergrowth and mushrooms. You’ll love the subtlety of a cuisine marked by ceps, black trumpets, girolles, sparassis, field mushrooms, ink caps or even aromatic clitocybes. Rarely have we seen a chef so at one with his woodland environment and in his words, "the business would not be what it is without mushrooms".
Travel in Haute-Corse with Breton chef Yann le Scavarec at the Relais du Silence la Roya. He crafts personal dishes in his restaurant with Corsican ingredients to really bring them to life. Deeply rooted in his environment, Yann le Scavarec works with regional producers, selecting the best products that he then showcases in his dishes. For him, it is essential to work with fresh, quality goods such as fish: “we poach fish in olive oil here”. In tune with his environment and gently in sync with his country’s seasons, he collects his herbs himself. One example of this is water mint, which he later transforms into sorbet. “I add the herbs sparingly, using them as a condiment on fish such as dentex.”
Every day, our chefs keep the traditional cuisine alive with constant tweaks to freshen things up. And if their dishes are particularly delicious, it’s because as well as being chefs, they’re first and foremost passionate about and in love with their land. Their ingenuity and inventiveness allow them to cleverly blend ingredients.
With Patrice and Xabi Ibarboure, it’s one surprise after the other. Deep within the Basque countryside, the Relais du Silence hotel L’Hostellerie des Frères Ibarboure has been passed down through the generations. Xabi demonstrates enormous creativity with an ingenious new spin on Basque cuisine. But before taking the reins, Xabi Ibarboure (the eldest brother) observed his father and immersed himself in his knowledge and talent. "My father used to work a lot with roasting and he’s passed this expertise on to me,” he says. “I haven’t forgotten the basics, but I also look to work with more contemporary cooking styles such as sous-vide, slow cooking, etc.” Now joined by Pastry Chef brother Patrice, the two brothers work tirelessly to rethink terroir cuisine and share their passion with you.
